Whole grain seeds & nuts bread, turkey, cream cheese, cranberry sauce, alfalfa sprouts & sunflower seeds. Nom.
I made the viral pan dumplings, topped with all the goodies!
Filling is ground chicken, napa cabbage which I sweated with salt & squeezed dry, green onion, rice wine vinegar, soy sauce, ginger, garlic, an egg & cornstarch.
Mixed it together and rolled meatballs, which I seared on both sides around 3 minutes on medium heat.
Then I dropped a wonton roller on each meatball, poured in 1/4 cup of water, then put a lid on the pan and steamed them until done.
Plated with more soy, sriracha aioli, chili crisp oil & green onions.
Messy = DELICIOUS!
I made spicy Swai fish filets, blackened in a southern kind of way. ❤️ Cajun seasoning, chili powder, jalapeno seasoning, tomatoes, chopped jalapenos, & then I served it on some rice.
Dinner salad, which includes red & green cabbage, napa cabbage, carrot shreds, green onions, corn kernels, lemon pepper tuna and wonton crisps. Delicious with just a touch of sweet & sour sauce.
Lentil soup with yellow potato, carrot, onion & spinach. Most might not understand what I enjoy about this soup, but that's ok. I love it, it's easy, and it's extremely healthy.

Made palmini noodles with red argentinian shrimp, that I snuggled into a sauce I created out of fresh roma tomatoes, red bell pepper, garlic, pesto, parmesan & oregano. Delicious, healthy, filling.

Grilled cheese sandwich stuffed with real crab meat I removed from the legs, claws & shoulders myself. This is made with cream cheese, shallots, cheddar, mozzarella, chives plus both lump & fresh crab. The sourdough is encrusted with grated parmesan.
Made a simple & quick salad. Albacore tuna, dill pickle chips, green onion, purple onion, english cucumber & olive oil mayo. Served mine with red bell pepper, and a couple tortilla chips.
Pan seared Chilean sea bass in butter with pesto & crushed red pepper flakes, served with pesto campanelle & oven roasted, parmesan encrusted yellow squash. Exquisite.
Slow cooked teriyaki chicken thighs served with rice, pineapple tidbits, and haricots verts. That's fancy talk for green beans. Anyway, I made the teriyaki myself and it was delicious.

Spinach, asparagus, orange slices, pomegranate seeds and pepitas.
Baked cod with cauliflower mash smothered in an orange infused buerre blanc sauce, served with a spinach & asparagus salad with fresh oranges, and pepitas. Both served with pomegranate seeds. The taste was ON POINT. The fruit was surprising.
The sauce separated a little but it was still magnificent.
Tonight I'm having a store-bought salad kit with kale, 3 cabbages & carrot. It has yummy sweet onion dressing and bacon + sunflower seed toppers. Served with a toasted tuna sandwich on organic, seeded whole wheat with dill pickle chips.
