Tri-colored cheese tortellini, carrots, broccoli, red peppers, green peppers, lite Italian dressing, red onions, dry Italian herbs, cracked black pepper, Monterey Jack pepper cheese and a few tablespoons of crumbled feta then all mixed together. I think next time I'll add black olives! Served with baked zucchini- cheese melt & bread.👌🏼
My recipe needs a little tweaking but this hit the spot for lunch today. I made dressing with fresh lemon juice, extra virgin olive oil, Dijon mustard, honey, salt and pepper. The salad is celery, canned tuna, canned cannellini beans, and grape tomatoes. I think I’ll add some dried oregano and some garlic powder to the dressing. 😋
I didn't have time before work to boil rice to go with it, so I settled for raw veggies and eggs.
I made pizza pasta salad yesterday and decided to put some on a bed of lettuce today. Added an extra drizzle of olive oil and some balsamic glaze for a little extra dressing. Yum!
kale, butter lettuce, quinoa, sweet potatoes, apple, crushed almonds, chicken, feta
there’s other stuff involved too, but you get the idea.
A current favourite. Love the spicy kick and the freshness - cheap and cheerful too!
Long time lurker, first time poster. Slimming before a summer holiday to Mexico this summer, so I’ll be posting a lot more for accountability!
With red onion and avocado
For a bit of protein I marinated tofu with zaatar and air fried it. Optional because tofu is not my SO’s favourite. So he adds his own stuff. No dressing in salad apart from EVVO and lemon. Mango super sweet and homegrown. Probably slightly over-ripe. Kale, spring onions and red peppers with mango.
I just went went to get some sushi at the local gourmet corner store that is ridiculously over priced. They didn’t have the sushi I wanted but the chef saw me looking longingly at the case and said he was making another roll which sounded pretty good so I waited for it. As I was waiting I wandered the store, looking at all the overpriced but delicious items. No one in their right mind would do their regular shopping there so items sit on the shelf longer than in most stores. Then I saw it, like a beacon of light, a bottle clad in the purest shimmering samite, sitting aloft on the high shelf in aisle 4 signifying by divine providence that tahini truly is the holy sauce, the no-longer-in-production Annie’s Goddess dressing. There were actually two bottles and, despite a little bit of guilt, I bought both of them.
I have been deeply mourning the loss of Annie's dressings, specifically Goddess, and have tried several different online recipes to recreate it. None of them really come close. Has anyone been successful in this?

One from a few nights ago and liked the rich colours in this one. Also, the big jars of roasted red peppers are the best cheat method!
Leftover veggie salad: cucumber, red onion, sweet mini bell peppers, celery, chopped spinach and whatever cilantro I had left
Dressing: lemon juice and ev olive oil equal parts, dash of red wine vinegar, half a spoon of honey, 5 garlic cloves, a butt load of dill and salt and pepper. Emulsify in blender
