Steak Sandwich With A Twist

Today I made a great meal for myself and I'm wondering how to elevate it even further. I got my hands on some mushroom and black truffle sauce/condiment, and some gochugung. So I made a mayo sauce out of those. My skirt steaks have a sprinkling of some Cajun seasoning. All placed on a beautifully toasted romano and basil keiser bun. Now what I'm wondering is; what cheese or other toppings would be good? I'm up for any suggestions.

HEC melt on multigrain

By layer - multigrain, Duke’s mayo, four thin slices of Krakus reduced sodium Polish ham, two fried eggs, two slices of Cooper Sharp, yellow mustard, multigrain. Browned in cast iron with butter, finished in a convection oven.
