The national Dish reimagined. Classically prepared Ackee but instead of Saltfish, I use fresh Codfish seared and braised in ginger infused coconut milk broth served over a green plantain mash.

Lamb Loin Chops

Hands down my favorite cut of lamb. It’s a little lamby porterhouse. Thick cut, meaty and juicy. These are almost fail proof because they are enjoyable at medium rare, maybe a little more so at medium. Something about the chew. Oh there’s a tri-tip in the background but that’s a story for another day….

Thanks all for the positive responses and comments. I dug the video up from my archives. This is an older version than the photo I posted. The only changes were I added andouille sausage and I topped with charred okra. Enjoy!

Diced sweet potato quickly blanched then pan roasted with aromatics and Swiss Chard, chive garnish, avocado sidecar. I’m no vegan but I can get jiggy with it here and there!

One of my favorite things to harvest in the backyard garden is callaloo. Sometimes it grows faster than I can consume it. This year I aspire to do better. The tomatoes are also home grown.

Chicken thighs (my favorite) deboned, quickly velveted and wok fried with broccoli, mushroom and onion over white jasmine rice.
