“Italian” Food

To prefix this post -
Born in the Bronx to an Italian mother who didn’t move to the US until she was 20.

Spent most of my life in Dutchess County and the Bronx.

A few years ago I had Frank Guidos for the first time. For the price, the portion was pretty good but the quality I thought was below mediocre and the sauce tasted like it came out of a plastic container. The eggplant was very greasy. I was disappointed and never had it again.

They have so many 5 star reviews and just couldn’t see it when I had it. The prices have gone up looking at the menu and they still have so many positive reviews.

Now I know Italian and American Italian cuisine are two different things.

Maybe I was spoiled with the cooking growing up. Maybe Guidos had a bad day?

Ulster has far less than Dutchess.

Just looking for others experience there or where they like to eat?

Just wondering what everyone’s opinions are on these chicken sausages?

My three year-old has never had a hotdog before because of the ingredients and these seemed to be a little less “bad” ingredient wise. Cooked them in a skillet and threw them on a toasted hot dog bun. He loved it.

My wife actually likes them as well.

My family is from Italy and I know these do not hit like a real pork and beef sausage with lots of fennel but I thought they were still good enough to eat. I threw some spicy mustard on one as well lol

I bought this stand mixer about six years ago. I used it maybe three times and then it has sat on us for about three years.

I’ve never used it for pizza dough, but is this model motor strong enough to handle pizza dough once a week?

Also, I am not sure if maybe I need to grease the gears inside or if there’s any maintenance? The motor did not smell like it was burning, but it did give off a small odor. It was covered in dust. I’ve never done any maintenance. Not sure if you could hear from the video if it sounds OK.

Any help is appreciated

For context, I will be turning 37 in May and closed on a fixer-upper in May 4 years ago.

30 year 4% fixed. We purchased from a family member for 100k below market value and spent the last 4 years renovating and making it our home.

I have 26 years remaining on the mortgage with 260k(rounded up) balance and 250k on equity on the home.

I will be eligible to retire at 55 from my transportation position with a defined benefit pension (60%) in NY and have a 401/457 with 500k (no company match).

Ultimately my goal is to pay for my son’s college tuition so he doesn’t have to begin his adulthood in debt.

I also want to have my house paid off somewhere near age 55 so I can live my life.

After May, my only debt will be the mortgage. I spent the last 13 months paying off a 0% interest loan on front porch. (750 a month, opted against using savings or 401k loan)

Just looking for some tips as to a realistic game-plan on shortening the loan. How much of a difference I can make even though I haven’t made any extra payments.

Mortgage is currently 2k a month with taxes included. Just looking for guidance, how much of a difference could a couple hundred dollars make a month against it at this point.
