Help a milk chocolate lover learn
I am not much of a chocolate lover myself, but love the kind of chocolate that real chocolate enthusiasts tend to hate. Whoppers and Butterfingers are examples of chocolate I like. I have recently taken up ice cream making and it turns out I'm pretty good at that, but I struggle with chocolate flavors and infusions because I'm such a pleb when it comes to this burnt bean. I made a black raspberry chocolate chunk ala Graeter's and it turned out GREAT except for the chocolate which even I understand was the wrong choice.
The real McCoy uses a chocolate that I think is dark, but it's sweeter than most. It's right on the verge of going into that vegetable territory that I don't like about dark chocolate. I'm trying to figure out a good replacement for my next batch of this ice cream, but have no clue about this stuff. Anyone have recommendations for a lightly sweet dark chocolate?
