Serendipity happened today during my spring cleaning. I had completed my washing of my grill and decided to re-season the griddle plate. I have a grill that has temp control and a convection fan so I decided to use that instead of potentially dumping a bunch of smoke into my house. After I got that going, I noticed I had 2 Costco containers of white button mushrooms that I needed to use soon, so I decided to roast them while I was also seasoning my griddle. The result was awesome! Tossed with some olive oil and a little Johnny’s Seasoning salt. Roasted in the convection for 20 minutes, gave a stir, then roasted for 20 more. Emptied it all into a bowl and then tossed with a couple of tabs of butter and a couple of dashes of Worcestershire sauce. So happy.
