Going to bed extremely early to avoid bingeing

I am a 27F who is currently being evaluated for possible sleep apnoea. I am persistently tired and run down, get ill frequently with an otherwise normal immune system (4 colds in 6 months) and am apparently grinding my teeth and occasionally gasping in my sleep. My memory is also quite poor. I am a little overweight but not majorly so. I do also have IIH.
My head has been hurting on and off for several weeks. The pain is mild, maybe a 2/10, but it is persistent and uncomfortable.
Could this be caused by sleep apnoea? My understanding is that sleep apnoea headaches occur in the morning, whereas mine tend to come on during the day.
I always kind of have a headache
I'm seeing my neurologist next week, thankfully. I'm also thinking of making a GP appointment.
Treatment is 250mg Diamox and eyes were doing well at my last check-up (almost completely back to normal). I don't have any other symptoms except these stupid headaches and maybe mild brain fog/absent-mindedness. The headaches are like a 2 on the pain scale but are very persistent. I had a normal CT with contrast 2 years ago. I'm a bit overweight (BMI 25.5 at most) but am losing slowly. I am dieting at the moment.
???? Please help me calm down. I'm worried I've got a brain tumour or aneurysm or something.
Not sure if related - boyfriend says I grind my teeth in my sleep and I'm wondering if I have sleep apnoea. I'm only 27.
I ate one whole one and just the toppings off the other slice of bread
