Jamie Oliver Super Grains - low spoons grain bowl

It's definitely not a looker but it's good! I bought a 6-pack of these microwaveable lentil/greens/grains blends to try a few weeks ago at Sam's Club for $9. My back is really sore today and I remembered I had these: Tear open at corner, microwave for 90 seconds. I transferred the contents to a bowl and heated it a little more, then added an ounce of feta, a shake of Greek oregano, and teaspoon of Greek olive oil.

The grain blend has a respectable flavor on its own but with the feta, YUM. Everything has kept its shape pretty well so it's not mushy. I could see eating this right out of the pouch for lunch at work. It's around 2 cups of food so it's enough by itself, but you could also toss in any leftover veggies you have (it would be great with roasted mushrooms). Or a pouch of tuna. Maybe some whole wheat pasta and turn it into a sort of protein pasta salad. Could work with soy sauce, sesame seeds, green onion, carrots, and smoked salmon. It has a lemon-garlic type dressing so it's pretty versatile. An impulse buy that turned into a great find!

Cheesy grits with salami and artichoke hearts

Microwaved for 5 mins, stirring half way (careful it bubbles up). Added a slice of cheese, salami and artichoke hearts i had in the fridge. Random seasonings. Basic and comforting.

butter toasted orzo pasta & peppers

Take 4 tbsp butter, half or whole sliced onion, 1 lb of orzo pasta I pretty much cook the onion while toasting the orzo in butter until golden like this.

After toasting, add this much chicken broth and/or buillion + water and boil it for about 10 minutes. Add chopped bell peppers. Salt and pepper.

And you'd be done! 🥰🌈 it is also good cold yes, you can add a sprinkle of vinegar to brighten it up

Ways to use grilled chicken skewers?

I got these chicken skewers from Target. I’m thinking if I can come up with a variety of low effort meals to make with them, I might add them to my usual shopping list. The first thing that comes to mind is cutting them up and putting them on a salad or in pasta (that’s the kind of low effort meal I’d normally cook) but I think that’s probably not using them to their best advantage.

What else can I do with them?

Context: I have a stove, oven, air fryer, and toaster oven, and usually only keep frozen veggies on hand other than carrots and romaine. (And long lasting things like garlic.)

Chicken marinara with potatoes

Today I just Took three ingredients that I had and winged it. I was running on barely any sleep and spite. I cut up some chicken, some potatoes, and a jar of marinara sauce, put it in a slow cooker for 4 to 5 hours on high. It turned out really good honestly, Will definitely do it again. Also, I don't know how much chicken or potatoes I used. I cut up 10 baby potatoes and a bunch of chicken ❤️

A quick snack for a sweet tooth

I get moments where all I want is something sweet, but need to save those spoons for work and getting back home safely. so, here's a quick recipe to satisfy that sweet tooth.

1-2 heaping tbsp creamy peanut butter (depending how much you want)

20-30 chocolate chips

put the peanut butter in a microwave safe bowl and sprinkle with the chocolate chips. microwave for 30 seconds. stir to combine and microwave for another 20-30 seconds. mix well and enjoy your 'pudding'

this can be made dairy free with the dairy free chocolate chips, am not sure about using a seed butter though

Day 2 waking up craving kimchi

Kimchi jeon (pancake) for 1. 2 T ap flour, 2 T water, splash of kimchi juice, kimchi, scallion, rice vinegar pickled red onion. Fried in rice bran oil over medium heat until firm and crispy on both sides. Soy sauce and rice vinegar dipping sauce (1:1). Kimchi and scallion cut with kitchen shears.

Minimal prep & ingredients for a quick & easy dinner 🥰

Not really a recipe because I didn't measure anything, but here's what I used:

  • 6oz beef tenderloin steak
  • Penzeys roasted szechuan pepper salt
  • Lundberg 90-second jasmine rice
  • Red spring onion
  • San-J Tamari soy sauce
  • Olive oil
  • A few spoonfuls of the liquid from a container of kimchi pickles
  • Cheese curds

Cubed the steak, seasoned with the penzeys, sautéed in olive oil on medium-low (y'all could use a higher temp, I just hate it when oil splatters all over my kitchen lmao) until just cooked & set aside on a plate.

Sliced/diced & seperated the onion whites from the greens, added more oil to the same pan & sautéed the whites of the onion until soft. Added the steak back into the pan to brown it, then set it & the onions aside on the plate again.

More oil in the pan, emptied the rice (not microwaved, just straight from the bag) into the pan (still on med-low) & stirred that around until evenly coated in oil, added a generous amount of soy sauce & several spoonfuls of kimchi pickle liquid to hydrate the rice, then just cooked until I thought it was done lol

Added the steak back into the pan & stirred to combine, added some cheese curds & put a lid on to trap the heat & melt them a bit & finally topped with the greens of the onion & devoured straight out of the pan 😹

I was super lazy with the seasoning, but it was still really good for such a low effort meal. Also, gonna be honest, I originally planned to use a 5oz sirloin, but accidentally grabbed the wrong steak from the freezer the night before & didnt realize until it was already thawed lmao but oh well it worked out in the end 😋

First time Cooking in years

I'm 24 and disabled. I made orange chicken in a crock pot. I will say that I didn't follow the recipe exactly and I just used what I had. The recipe calls for barbecue sauce, But I didn't have that. I used a jar of orange marmalade, 2 tablespoons of soy sauce, 1/4 cup water. I did it in the slow cooker for 5 hours and it was perfect! It was a very intense flavor, But I'm certainly not complaining because I haven't had a home cooked meal in years. Egg, kimchi, and 'murican cheese is always a winner

Rolled up in a tortilla. That thing where you cook a scrambled egg and stick the tortilla to the top, then flip it. I recommend putting the kimchi between the egg and cheese so the tortilla sticks better and the kimchi juices are more contained.

Protein/meal replacement shake recommendations for zero spoon days?

I've recently decided that meal prepping is just too much effort for me, plus I typically don't like eating most foods repeatedly.

But one thing I do like and can tolerate several days in a row is protein shakes. I love the convenience and how filling they are. I've only had one kind tho, a plant based Koia one that my work keeps in stock.

They're expensive to buy even with my discount tho (almost $4 a bottle). I figured there are probably some people here who use protein or meal replacement shakes.

Do you have any recommendations? I would prefer plant based ones bc I need to keep my saturated fat intake low. But I can have dairy so feel free to recommend dairy ones as well!

EDIT: forgot to mention that I'm talking about the pre-made bottles, not powders!
