First time using a non pellet smoker, man did I mess up

Put a few racks of ribs on the Huntsman. Added like 4-5 small wood chunks, got it ripping at 275 and put the ribs on. Over the course of 2 hours I added probably 3 more chunks when I notice the smoke dying down. However after 2 hours the ribs were wayyy over smoked. Lots of black build up all over them, rather than that deep cherry red I look for. So I’m assuming they were just exposed to too much dirty smoke over the course of the cook. So my question is, how many wood chunks do you guys add when smoking with the huntsman? Just a few at the beginning? Or do you continue to add and I’m just adding them to the fire wrong?

First Cook with Venom Controller and Slow n Sear

Just finished my first cook with the venom controller and SnS in my 22” kettle.

I only lit 12 briquettes to start with btw. I had it set to 275F and it overshot to 331F within 30 mins and wasn’t very consistent in the 4.5 hrs until the last hour of cook.

I also notice the ambient temp probe seems to be off by 15-25 degrees compared to my TempPro TB829. Notice the temperature spike to 330-340F on the TempPro and Venom has it closer to 310F.

What should I be doing differently?

Newbie Question

So I’m interested in purchasing the grill, was wondering what start up looks like in this grill. Do I have to start with chimney or does it self ignite like a pellet grill where you just turn on and dial to temperature?

Giant or regular huntsman?

So I'm in the market to buy a huntsman, but I can't decide if I want the giant or regular size. I typically cook for my family of 5, but occasionally cook for large groups (groups of 20-30, maybe 2x a year). Any advice on if the regular huntsman would suffice, or if the giant huntsman is worth the extra money? I've been reading posts about the giant huntsman taking a long time to heat up, which would be annoying for my typical cooking situation. Also, what are some of your favorite accessories to go with it?

People have been using the grate from an 18” Weber in the 22 to get more space. I was curious if a 22” Weber grate would work in the 26” huntsman and it looks like a winner.
