Rokurinsha Ueno - Tokyo - tonkotsu
Oborodzuki - Tokyo - tsukemen
Nipponbashi Sakaichi - Osaka - tokusei shoyu
Men-ya Inoichi - Kyoto - black soy Wagyu
5/6. Ramen Matsui - Tokyo - shio and shoyu
- Ikuta-an - Tokyo - chan style
Mix between random walk-ins and planned/booked visits.
Highlights included the clam and scallop shio and the quality of the noodles at Matsui, the chashu at Ikuta-an, and the broth and chashu at Sakaichi (the egg was on another level too).
Found Inoichi rather underwhelming on the whole, and was the only shop without any locals.
