Constant clogging Ender 3 S1

So some background. I bought a used Ender 3 S1 about a month ago as my first FDM printer. For the first 3 weeks it was great after I got it figured out. Went through almost a full role of Inland PETG. Then I had a print fail and it blobbed up on the nozzle real bad. In the process of cleaning it I noticed screws that hold the hot end on were stripped from the previous owner. So I ordered a replacement hot end off of amazon. Installed it and ran a test print, it would not stick to bed. 5 or 6 rounds of bed leveling and build plate cleaning, and a post here on Redditt, bought 2 new build plates. Same issue. I figured out the duct for the fan had melted and was now lower than the nozzle. I fixed that and printed a new duct from a file I found on makerworld. Bought some Sunlu PETG and now it clogs every time I try to print anything it clogs. Sometimes it happens on like the 10th layer sometimes as soon as it starts. I have been using a .4 nozzle. Do I need to use a different size? I don't really want to buy a different printer, because I thought I had this figured out, but I am already tired of have to take apart the extruder, all though at this point I feel like I am becoming an expert at assembly and disassembly of it. Please help!

I have been printing almost constantly for 3 weeks. Started with PLA, then started printing some stuff with PETG. Ran out of PETG filament and switched back to PLA. First print didn't stick, I thought maybe I didn't get the build plate clean enough. Second print didn't stick. So I leveled the bed again. Still didn't stick. I have leveled the bed 3 more times, and cleaned the build plate at least as many times. I am not sure what else to do, any help would appreciated.

Temps I am using for this PLA which worked in the past are 60c bed 200c nozzle, if that helps.

First time printing body. I want to have a windshield in it and was thing of using a replacement face shield. They are .040 thick. The other thing I thought about is clear polystyrene from Evergreen Scale Models. I didn't know what would be easier. What do most people use, what should I stay away from. Just has some left plastic in it now, for a template. Thanks for any suggestions in advance.
