I had this somewhere ages ago and loved it. I checked out a couple recipes and settled on this one:

I was very pleased with it. I have it over rice or corn tortillas with some cilantro and cotija cheese.

If anyone has any suggestions or personal touches I'd love to hear them. I've thought about adding corn or some kind of bean to bulk it up a bit.
