Good reminder to weigh your ingredients and not trust the bag weight. I have to say I was particularly bummed to see this egregious light packing from KA. Plugra in its 5g wrapper weighing correctly for reference.

Can any laminators here recommend a sheeter suitable for croissant dough?

I’m used to running a $20k+ Doyon floor reversible for a bakery doing 5k portions but I’m solo now and that just ain’t in the budget. Hand pinning has been fine but now that I’m scaling up to 100+ a week it’s beating me down. I looked at some sub $1k table shelters but I’m wary that they can handle laminated dough and I think skipping the reverse feature would be awkward. Anyone with experience using a floor model and a counter model that can vouch for them? How is your workflow if you’re not reversing? Thanks.

If so I'm so sorry that was one of the most excruciating secondhand experiences I have ever been subjected to. Seeing him just yeet out of consciousness as his jokes bombed was every public speaking anxiety I ever had made manifest. This guy was a 14 year veteran! I'm shaking.

I'm used to deciding which game to uninstall to make room for another by looking at the file size formerly (I think?) right there near the play button. Where'd they move that info? Do I need to enable something after the last update?
