How easy is it to transfer courses once the academic year starts?

I've got an offer for Engineering Mathematics, but I'm wondering if I would be able to transfer to the Mechanical Engineering course once I get to Bristol. Is that relatively easy to do or is it very luck-based? What would the process be like?

I've already asked to change my course through the application portal which was unsuccessful, presumably because they've reached capacity on the course, but I'm hoping that there'll be more places once the course actually starts.

I've only received these two offers, but I'm just not sure which one will lead to a better job/experience in the future. I've looked at the modules for both and I know I'll find the content interesting, so it's just a matter of which one to firm or insure. Here's what I know so far:

Engineering Maths at Bristol (AAA or A*AB) - Bristol apparently has very good employer connections, which is good for after I graduate and also because I REALLY want to do a placement year, which the course allows you to do in the middle of it. The thing that worries me though is that this is quite a non-standard course, which might leave me useless to most well-paying employers in the future, but I could just be being paranoid about that. The course is quite literally built around being employable and versatile, so that issue might not be real.

Mechanical Engineering at QMUL (BBB) - If I go to QMUL I'll have a lot less debt since I can just live with my parents and don't have to worry about living costs mostly. However, the fact that the grade requirement is so low kinda makes me concerned about the quality of the course, especially since the DiscoverUni stats say that Engineering grads from QMUL barely earn more than grads from the rest of the country. I've applied for the Industrial Experience version of the course, but after looking around I'm pretty sure that it doesn't guarantee that you actually land a placement, which makes sense, but then I don't know why they let you pick it in the first place.

I am 90% sure I will meet the grade requirement for whichever one I pick, so I'm not factoring that into which I will firm. I'm hopefully looking for advice from people who have more experience of uni, or even better from those who are taking these courses currently. I'm getting the feeling that Bristol might just be the obvious pick, but I want to hear from others first.
