How did artichokes enter cuisine?

I know that artichokes were eaten as far back as Ancient Greece and Rome, but I haven’t a clue how they actually were discovered and developed into a part of cuisine. They seem among the least likely of plants to experiment with, and the effort vs reward ratio in terms of nutrition can’t be that great. Are there any good theories?

I love to run in the mornings. I love to hit hotel buffets right when they open. This sometimes creates a timing conflict.

I think it’s fine to do a hotel breakfast buffet in running clothes after a run. My wife thinks I’m a disgusting slob and that it wouldn’t kill me to be 20 minutes late to the buffet after I showered and changed.
