Best RPG for going on an epic quest.

Are there any games out there where you can go on an awesome adventure and do some questing outside the obvious candidates like BG3, The Witcher, KCD, Skyrim, etc? I really like being able to approach quests in different ways to flesh out my own adventurer, but I can't find something that has both the really good side quests and a good character creator.

From everything I know about the universe, which is very little, this seems completely implausible, but maybe someone knows something really big that I just haven't found yet. If anybody has an idea of how an infinite improbability drive could be made in real life, or something similar, such as The Infinite Improbability Machine, I'd love to know.

I like The Dictionary of Obscure Sorrows, but find it a tad depressing. I just wanted to know if there are any books like it out there that name happier feelings.

Like the feeling you get after a rain, when all the colors are saturated and cold yet so bright, and you feel like you're walking on the edge of some kind of fairy land. Or that peculiar kind of wanderlust that makes you yearn for an epic adventurer with daring-do.
