Sunday (ingredient) prep day, week 21

Every Sunday, I prep for the week. In my case, that's cutting all my vegetables and making a few components to share across different meals. This week, I made some tzatziki to go with a gyros rice bowl, falafel wraps and some flatbread with chicken. By prepping ingredients and components, I still have some flexibility. For instance, tonight I think I'll have gyros with rice and some veggies, but I also have some pita in the pantry that I could use instead. I'm not locked in to the rice. Likewise, I have 2 portions each of asparagus and green beans, so I can still choose on the day which of the two I'll prefer with my sausage, salmon or rice bowl wth pork I'll be having that day..

Weekly(ish) grocery haul for single M + a little bit of a pantry and freezer stockup

Produce - € 18.29
Meat and dairy - € 25.36

That makes for a total this week of € 70.45

I still have a few things in the fridge and freezer still, like some green beans, limes, falafel, salmon, ground chicken, etc, so I'll be using that up as well. And as always, I have a well-stocked pantry ful of staples.

Lots of bread and deli meats this week, because my nephew is with me and he wanted toasties tonight, and since we got a whole loaf of bread, I chose sandwiches for lunch while he picked pain au chocolat. So the ham, cheese, chicken and salami are for several meals.

A few things are for the pantry/fridge/freezer. The sugarfree syrup/cordial was on sale this week, and I like having that on hand, so I stocked up big. This will last several weeks. I also picked up some canned herring to have as a snack or with a meal at some point in the future. Butter was on sale, so I bought some just to have on hand, and I got some of those American "cheese" slices just to have on hand as well, since I recently used up the last I had. I'm using some of the tilapia for a fish curry on Friday, but most is just going in the freezer. The pita, I might use some of it tomorrow with the shoarma, in which case the other half of this double pack will go in the pantry. If I decide to go with rice instead, the whole pack will just go in the pantry.

Sunday (ingredient) prep day, week 20

Like I do every Sunday, I prepped for the week. That means cutting all my vegetables, and I also made some beef stew, a big batch of curry paste, and soaked some chickpeas for a curry.

The beef stew will be used tonight, served with some oat rice (oat groats) with a veggie on the side. The leftover beef stew will be used in a steak pie later in the week. Some of the curry paste will be used tomorrow for a vegan curry, the rest will I will keep in the fridge for a curry next week.

By prepping all the ingredients, not the whole meal, I'm not locked in. For example, I have several portions worth of spinach, green beans and broccoli, and I have pork, sausages and salmon. Which combination I'll have on what day, I can decide that day. But because everything is prepped, I can still have a meal on the table in minutes.

I still have a bit of produce left from last week, and I have a fully stocked pantry to use.

Not everything will be used this week. The pork for example, I'll use 2 pieces this week, the rest is going in the freezer. The beef I'll use in a few meals, and what's left over will go in the freezer as well. The falafel is for next week, I just picked it up not because it was on sale. The crispbread, stock cubes, chili oil, ranch, etc, are just to stock up the pantry.

My nephew is with me today, and he picked hot dogs for dinner, and for lunch he wanted pain au chocolat and a cookie. I went for some wholewheat rolls with ham. For some other meals this week, I'm doing a beef stew (leftovers will be used with the puff pastry for a steak pie), steak fajitas, lentil and chickpea curry (with the curry paste made from scratch), fish tacos, and a few variations of pork/sausage/salmon with spinach/green beans/broccoli.
