
Made a vegan Gado Gado salad for lunch yesterday!
Recipe -
1 lettuce
1 cucumber
1/2 carrot
Handful of green beans
1/2 a block tofu (you can go full block)
Handful of cherry tomatoes
Micro greens & peanuts for topping
Dressing-
1 shallot, 2-4 cloves of garlic, handful of peanuts, birds eye chilli - saute in a teaspoon of oil & blend together with tamarind water & 1/2 teaspoon date syrup (or any sweetener of choice) & salt.
Blanch - beans & carrots & tofu for about 2-4 minutes. ( i boil my tofu because it tastes better & absorbs the sauces better)
Pan roast or air-fry tofu & beans
Mix with rest of the veggies & add salt + pepper & lime juice.
Top with the dressing, microgreens & rest of the peanuts.
