How does the milk not curdle in these recipes?
In those recipes I see in tiktok and Instagram like the Brazilian limeade where they blend limes and then add sweet condensed milk.
Or a different one that I saw today where they squeeze lemons, then blend pineapples and mangoes with sweetened condensed milk, then add the lemon juice to it.
I always wondered how doesn't the milk in the sweetened condensed milk not curdle and make the juice grainy with curds????
In the videos it always looks like no type of acid was added to it. Wonderfully dissolved in the juice.
Is it measurements? is it lies? Is it magic?
I personally never tried to make the juices because I am afraid of it curdling?
