My first attempt at making a Banana Blueberry & Greek Yogurt cake

It was delicious but next time will leave out the protein powder and chia seeds.

It serves 2 so I had half for breakfast and the other half in the evening topped with greek yogurt and peanut butter for a dessert 😃

1 banana (mashed) /

1 egg /

80g 0% fat free greek yogurt /

1 tsp runny honey /

1 tsp vanilla extract /

60g rolled oats (blend with 2 tsps of

chia seeds to make flour) /

½ tsp baking powder /

¼ tsp ground nutmeg /

15g unflavoured protein powder /

50g blueberries /

METHOD:

Preheat the oven to 180ºC /

Lightly grease dish /

Blend oats and chia seeds to make flour /

Mash banana + add beaten egg + yogurt + honey /

Combine all ingredients then gently fold except in blueberries /

Pour into prepared dish /

After 20 minutes check to see if done with a cocktail stick/knife. It may not seem done but if when you take it out and leave to cool for around 15 minutes it sets more.
