Meals on the camino

Bit of a random one, but some of the private albergues I have booked have basic cooking facilities, and I am considering cooking some basic dinners whilst I am on the portuguese coastal camino to save costs (and also dont always fancy eating out).

However I was just wondering if anyone has any particular recommendations of things to cook with ingredients that are readily available in local shops?

Otherwise I fear it is going to be a lot of pasta and cheese (although think I will probably want the carbs!)
