Homemade Detroit-style

Béchamel sauce, pesto, and all of the cheeses. (Muenster, Colby Jack, and sharp cheddar mix around the edges, and my usual mozzarella, provolone, and smoked Scamorza blend on the base) diced homemade chicken meatballs, shiitake and Crimini mushrooms, bacon crumbles, and grated Pecorino Romano. Out of the oven I added some dried herbs, and pickled red onions.

Homemade Detroit-style

Pizza night! We had company this week and they wanted pizza so I made this Detroit and I think they were happy. It had Béchamel sauce, pesto, and all of the cheeses. (Muenster, Colby Jack, and sharp cheddar mix around the edges, and my usual mozzarella, provolone, and smoked Scamorza blend on the base) Then diced homemade chicken meatballs, shiitake and Crimini mushrooms, some bacon crumbles, and grated Pecorino Romano. Out of the oven I added some dried herbs, and pickled red onions. All in a par baked 85% 72 hour crust. And then some of my chocolate chip cookies for dessert.

Pizza night! I think I’ll call it The Italian Hawaiian. It had my three cheese mix (mozzarella, provolone, and smoked scamorza), red sauce, grated Pecorino Romano, pineapple, strips of Citerio mortadella, and Hormel Rosa Grande pepperoni. Out of the oven I finished it with more Pecorino, dried oregano, and fresh basil.

It had my three cheese mix (mozzarella, provolone, and smoked scamorza), red sauce, grated Pecorino Romano, pineapple, strips of Citerio mortadella, and Hormel Rosa Grande pepperoni. Out of the oven I finished it with more Pecorino, dried oregano, and fresh basil.

Pizza night! Another pizza for a friend this week, and this time it was spicy! I started by brushing the spicy oil from the Giardiniera on the base, then a four cheese mix (mozzarella, provolone, smoked Scamorza, plus Colby Jack), seasoned whipped ricotta mixed with just a bit of green habanero hot sauce, grated Pecorino Romano, and Chicago-style hot Giardiniera. Bacon crumbles were added for the last couple of minutes in the oven. Then finished with fresh chives, lightly dried herbs, and more Pecorino.
