Beer "Can" Chicken & Oven-Charred Old Bay™ Corn Ribs

A recipe that grew out of the idea of barbeque beer can chicken.

I slap a chicken breast in a freezer bag with:

• A bottle of Doom Bar amber ale (I find amber ales to be best for this, but golden ales are really nice, too)

• A tablespoon of sweet paprika

• A teaspoon of smoked paprika

• Half a teaspoon of ground coriander

• A teaspoon of oregano

• A rough tablespoon of honey

• Salt and black pepper powder

After a few hours in the fridge it goes on a rack over a roasting pan in a 250°C oven for 20(ish) minutes.

The corn is brushed in olive oil and sprinkled with a bit of Old Bay on a lined baking sheet. Once it comes out of the oven (same amount of time as the chicken, slightly less for less char) I chuck it in a bowl with some butter and more Old Bay to coat it.

Also there are some potatoes there, too.

I love doing this, it's so easy and it's delicious.

I decided to repurpose an empty pickle jar in order to make more pickles. It's my first time pickling anything.

I'm using cider vinegar, just because I'm curious what that will be like.

Included some 'pickling spice' from the supermarket, which is mustard and coriander seeds, bay leaf, mace, black peppercorns and little dried birdseye chillis. I think some clove, too. I added a few sprigs of dill, too.

I was only going to do the seeds and the dill until I spotted the jar on the spice rack next to the mustard seeds.

In a week I should (hopefully) have some delicious pickles to munch on. I'm excited to try them.
