Carne asada

Two hour marinade (fresh garlic, squeezed OJ, lil soy, lil Worcestershire, paprika, ancho chili, cumin, Mexican oregano, lime, pepper) and thrown on the grill.

Hardly the fresh tortillas I get in MX, but these are actually tasty for admittedly super processed but zero net carb tortillas.

Used two different hot sauces bought from two separate restaurants in MX (La Docena and this little spot near Colonial Americana).

Sometimes you just need a really good $10 steak to

Living in an apartment where the fire alarm is way too sensitive and the exhaust not nearly strong enough, even a thin t-bone needs a reverse sear.

But OMG, as terrible as my plating is, this was a delicious $10, 18 oz steak. Basically half off.

235 degrees until 112
Internal, then one minute per side on a near dry but slightly coated with avacado oil cast iron as hot as she’d get… the final 30-45 seconds with a tablespoon of butter.

Damn this slapped. Not the prettiest, but when you need to wake up at 3AM to drive 5 hours for a 12-15 hour work day?

Hit. The. Spot.

There is no doubt that we’ve seen some significant organizational gains under Sterns… pretty much everywhere except the field (where obviously at the end of the day it matters most).

Why not bring in a true GM that can focus on the roster and on field personnel, someone who has more of a feel for putting together a team that actually is one, and allow Stearns to remain above that person organizationally but more directly inner with the structural side of the equation, the famed analytics, scouting?

If Cohen is so reticent to jettison Stearns maybe this is a better direction.
