Is it straight up just the cost of replacing your car 1 for 1 in the current market prices? or do they determine it some other way?

Only reason i’m asking is because no insurance company is willing to give me an agreed value even close to what it would cost to replace my car. I’m assuming being young would have abit to do with it too

My oil pan on my B series is weeping a good bit of oil and was looking to replace it. Should i just go with oem or are some aftermarket ones better? And should i use any sealant along with the gasket?
