So I really love Mizuba’s Okumidori… I feel like it stands up to milk in a latte but I’m also able to forgo the milk. What other powders would you suggest based on my addiction to this one?

Admittedly I don’t have a big ice cube tray yet so I made matcha ice cubes out of a mold meant for shot glasses 😅😆 Besides matcha ice cubes, does anyone have tips for avoiding a watered down iced matcha latte? I drink it too fast to avoid that and then end up sad it’s gone!

Matcha of the day… featuring improved layers! I used a local dairy milk that was the closest I could find to Hokkaido milk in Japan. It’s making the biggest difference even alongside some subpar matcha powder that I’m trying to use up. Just goes to show how much the milk choice can change the drink. Does anyone have a favorite milk or brand that they use? Do you use different milks with different matcha powders, boasting different flavor profiles?

Hi all, I’m visiting NYC soon for some matcha R&D. I’m sure matcha cafe recommendations are a dime a dozen on here. However, I’m specifically interested in visiting NYC matcha cafes and tea houses that are more “authentic”. By authentic I don’t mean they only serve usucha, however. I just mean their signature matcha latte stands on its own versus using wild flavors (no hate if that’s your thing, just not what I’m looking for or looking to emulate).

What cafes are must visits for someone looking for inspiration (powders, ratios, milk choices, ambience, etc) where plain matcha lattes are concerned? I would love to open my own cafe one day. When visiting Japan, Gokago Kyoto is definitely somewhere that impressed me. Admittedly there were smaller cafes that I loved even more but I figure that’s the most recognizable name I reference here. I admired their relatively simple menu and their quality that stands on its own.

Lastly, if you know of any matcha classes in NYC that are not to be missed for someone looking to open their own matcha cafe one day, please let me know. I already have my eye on some offered by Kettl in Brooklyn.
