Freezes, Hiccups and restarting GPUs after update/download

Description of Original Problem: Disclaimer: I am a noob in this and don't know all the corresponding language, the issue might also be something else.
A few days ago i tried to open the amd software for my gpu (I haven't done that in months probably). I have an AMD Radeon RX 6700 XT. It told me something along the lines of it does not work because the software is outdated and gave me a link to the amd drivers and support website where I downloaded the windows 11 version. I think it updated my drivers aswell- Now ever since I have been struggling with hiccups, freezes and restarting gpus. It often freezes the screen, turns it blackly shortly and then throws me out of the game with the error message "windows has restarted your gpu [...]" It mainly happens when tabbing out of a game too quickly or too often into my browser. This however never happened before. I wonder now if I did something wrong. Maybe it activated some settings that my pc cannot handle? I kind of have the conspiracy theory that having the software open in the background helps the performance but maybe thats just wishful thinking haha. Any help is very much appreciated :(.
Troubleshooting: I tried windows updates and rescanning for a driver update.
