Need help learning how to surface model

Hey everyone, new here. I'm trying to model a unique mandalorian helmet for a cosplay but my background is in CAD and I'm stumped. Is there any really good tutorials out there for fusion 360 or blender that doesn't just expect you to know every button and function at the beginning?
