I wanted to use up some leftover potato, so I made a fluffy potato waffle. Turned out surprisingly awesome.

Waffle
Half of a roasted russet potato
1 egg
2.5 TBSP AP Flour
1/2 TSP Baking Powder
Salt and Pepper
Garlic Powder

Other
Shredded Cheddar

Directions:

  1. Mix all waffle ingredients in the bowl. I left some of the potato pieces chunky to add texture to the waffle

  2. Preheat waffle iron and spritz with oil or butter

  3. Sprinkle shredded cheddar into bottom plate of waffle iron

  4. Add waffle mixture on top

  5. Cook it until its as dark as you want. the cheese gets nice and crispy

  6. Garnish with whatever you want. I did a fried egg and green onion, ketchup, and mayo
