I love using up leftovers and any odds and ends and creating meals based on what I have to use up. What do you use leftovers for? This week;

- I saved leftover bread from a baked baguette to cut into croutons, tossed in garlic olive oil and re-baked until crunchy. Added to a salad.

- I saved the juices from a roast chicken and used half to beef up a noodle soup I made for lunch. The rest will be used in Gravy on Sunday.

- I saved the fat from cooking pork crackling to use for my roast potatoes.

-I have a couple of leftover flatbreads and I saved fat from cooking up some diced chorizo. Planning to cut the flatbread into triangles, toss in the chorizo oil and bake until crunchy. I have some leftover grated parmesan I can sprinkle on too.

- I made a chocolate mousse at the weekend and had around 4 leftover egg yolks. I used half to make some aioli (served with the baguette and roast chicken) and the other half to make a Caesar salad dressing (served with the crouton salad).

- I have some aioli left and will use up in some bagels tomorrow with italian meats, roasted red peppers and swiss cheese.

- I have half a pot of heavy cream sitting in the fridge right now which needs to be used by Sunday. I'll prob make a brussel sprout gratin with it on Sunday to go with the gravy (made with leftover chicken juices). Along a roast chicken and the other usual roast dinner accompaniments.
