Just did some 0-400 wings on the XL. Incredible.
Costco refrigerated wings. Rinsed them this morning, popped them on a wire rack and let them sit in the fridge for 8 hours so the skin would dry out.
Took them out. Seasoned with Meat Church Hickory AP. Let them sit for 15. Popped them on the grill, grill cold/off. Turned to 400. After about a half hour flipped them. Another half hour they were ready and crispy. Internal temp on most was 205+.
Absolutely phenomenal and insanely easy. Will do this again.
