Questions About Special Meals and Tight Connections w/Checked Bags

I'm flying EWR to AMS by way of Dublin in mid-June. This is my first flight with Aer Lingus and I had a few questions that I haven't been able to figure out on my own.

First, I have a couple of food allergies that I'd like to avoid, specifically cumin and tomato (so no curry, nothing with red sauce, etc.). I figured the easiest way around this would be to pre-order a special meal, but the website is very vague about ingredients. In your experience, is there a particular meal that would work well for avoiding these things?

Second, I have a Saver fare ticket that originally came with a carry-on. I've seen that their baggage policy has changed since I booked the ticket and, while I'm not adverse to checking my carry-on, I'm a little anxious about doing this with such a tight connection (my layover in Dublin is something like an hour and 15 minutes). Should I just suck it up and pay the extra cost to keep my carry-on with me, or do you think I'll be fine with checking it?
