Cheaper tow hitch option for Formentor without electric tailgate?

I have a Cupra Formentor without a factory tow hook, and also without the electric tailgate / smart opener.
I was thinking about installing a tow hitch, mostly for occasional use, probably just towing a jet ski. I asked the official dealership and they quoted me roughly €2,000+ for the full installation.
They said they do not offer alternative hitches because:

In my case, the first issue does not really apply because I do not have the electric tailgate.
The second issue, parking sensors, also does not seem like a huge problem to me. As I understand it, the sensors would only complain when parking or reversing with something attached behind the car, which is not ideal but probably manageable for occasional use.
For example, I found a STEINHOF C-301 tow hitch for around €125, and it also seems to be certified / approved. Of course installation and wiring would cost extra, but the difference compared to the dealer quote is massive.
So I’m trying to understand:
- Has anyone installed a cheaper removable / manually detachable tow hitch on a Formentor?
- How does it work in practice?
- Any issues with parking sensors, electronics, insurance, warranty, registration, etc?
- What is the real difference between the official dealer setup and something like the STEINHOF hitch?
I do not need anything fancy or electric. Ideally I would just like a simple removable tow hook that I can install when needed and remove when not using it.
Any advice or experience would be appreciated.
