Glass out for diff metals?
Yo, I’m still pretty new here, but I am loovvving whetstoning. All of our cheap knives are so damn sharp now 😂
But now comes the challenge, I just moved on to sharpen the first of our high end knife collection, and it’s made of S35VN steel. It’s super dull right now, I put it on a 500 grit stone for twice as long as I had been doing for my cheap knives and it still won’t cut paper.
With cheapos, I was going 500-1000-6000-strop, and we love the result… but with very hard metals, is 6000 too high? I heard that glass out happens at diff point for harder metals. It’s a shapton 1k and 6k if that makes any difference.
After this one, I’ve got another very dull Damascus steel gyuto. Our other high end knives don’t need sharpening yet.
