Today I cooked for me and my mum, this is a dish inspired from a dish coming from a "fancier" restaurant I went to, some time ago!
what it is:
Seared Salmon coated with a sauce that has (Margeurine Soy-sauce, oyster sauce, honey, obviously this was applied when searing the fish).
Ontop of it is Italian sourbread croutons turned into breadcrumbs, sprinkled generously over the filét! (When making the croutons i had Pepper, Garlic, Honey, olive oil for flavour!)
Beside it is Salted boiled and oven baked potatoes. Basically normal potatoes that was boiled in water 2x saltier than the sea, then oven baked as they are without oil to create that nice looking crust (white and golden brown parts, yes with skin on!)
Under it is a nice Lemon pepper bechamel sauce with a drizzle of white vine vinegar to give it a little zing to the zang (no idea what it means but it gave the sauce a little kick to it)
8/10 IMO
Sauce wouldve needed a bit better colour? maybe couldve added some kaviar into it? parsley perhaps?
The croutons did get A LITTLE overdone hence the darker colour.
Potatoes couldve actually boiled a little longer to get a better crust but it was good otherwise.
(Originally the restaurant dish used a white flaky fish, but this worked nicely too :D Couldve used a garnish..)
