I marinated the chicken yesterday, cooked in the air fryer today.
1kg marinated chicken
2 tsp paprika
1 tsp Kashmiri chilli
3 tsp garam masala
3 tsp ground coriander
1 tsp cumin
2 sticks cinnamon bark
8 green cardamom
8 cloves
2 blocks frozen garlic and ginger
3 tbsp butter ghee
1.5 tbsp kasuri methi
3 green chilli (recipe states remove seeds but I just split the chillis and left them in)
2 tins chopped toms blitzed
3 small brown onions
80g cashews
Water as required
Soak cashews in about 200-300ml boiling water for 30 mins or so then blitz with a hand blender, add another 100ml or so of cold water then blitz again until smooth (The texture I went for was almost like a coarse double cream).
Air fry marinated chicken for about 10 mins
Soften onions over a medium head then add to a bowl with tinned toms and your cashew paste then blitz until smooth.
Put the butter ghee in a pan, medium heat Fry off whole spices until fragrant (I used cinnamon bark but I would half the amount if using regular cinnamon stick. Squeeze the cardamoms in your hand to crack open slightly for flavourful punch)
Add powder spices and garlic ginger to the pan (play with the ratio of paprika:chilli powder to your preferred spice level, also add more or remove fresh green chilli mine turned out medium spicy)
Add puree mix and simmer for a bit (about 15-20 mins until thickened slightly) COVER BECAUSE IT SPITS EVERYWHERE 😂
add water to a desired consistency of a thick gravy.
Add cooked chicken and kasuri methi
I also added about 100-200ml of double cream at the end just to calm the heat for my kids and also some coriander leaves because I enjoy the flavour.
I did not make the naan breads I got these from the local takeaway because I'm lazy 😂
