There are people and vloggers I see drizzle the entire plate with fish sauce before taking the first bite. But I've always done it differently: I only pour it on the rice, and I do it bit by bit as I eat.

I’m not sure why I do this (probably just mimicked what my parents did since I was a kid) but I feel like it tastes better this way. To me, the meat is already generously seasoned and marinated and adding more sauce makes it feel oversalted. The sweet, savory fish sauce is just a perfect for the rice.

I’ve asked several of friends and there is another interesting method: dip the meat deep into the sauce and then dab it onto the rice so both the fish sauce and the meat juices soak into the rice.
