Digital logic project resources or tips? (for ECE internships and coops)

Hello, Im going into my third year of EE where i have to find a coop. I'm honestly open minded to working in anything as long as it isnt strictly software. So in preparation Im making projects that will help me learn more and also have something I can put on my resume.

In our digital logic course last fall we made a generic cpu in VHDL however its been a while and i dont want to put something everyone else also has on there resume. I want to redo the same concept but in verilog, are there any good resources or tips you guys have to go about to make something like this?

Also been hearing a couple of upper years talk about "making a pipeline", does anyone know what they mean by this or how I should go about doing this?

A really big goal of mine is to work at AMD, so im looking towards layout/ mixed signal roles aswell. We made a simple amplifier with mosfets in class but again I want to make something unique so making a physical amplifier with a specific use case would be really cool as well.
