It is indeed not a usual way to do it. just many different parts of it taken to the extreme. It is a super easy dish at the end so quality of the ingredients and the technics are whats left to differentiate. Frying the basil does not destroy the flavor compared to traditional stir frying (which is basically steaming it) it actually makes it more intense
A lot of comments about it being targeted to tourists and such moreover every time i go there there are multiple groups of aunties so that already tells me more than i need to know.
Also i do think that there is an underlying racism common from the comments it is a very personal of mine but i do think many assume that Thai people are not supposed to upscale their dishes and are not supposed to own or operate fine dining restaurants. Because it contradicts with the image of south east asia that they build in their head.
