I’ve always used a pull through knife sharpener. Mine is very old and I came here for suggestions on replacing it. Where I learned that pull through sharpeners aren’t advised. I have some decent Henckels knives that I want to keep sharp.
I had originally avoided sharpening stones because I didn’t think I could reliably scrape this knife at the correct angle. Is there a wedge or something I can get to illustrate the correct angle for my knives? How important is it to precisely match that correct angle when using a stone?
