Flooring under cabinets & appliances?

I am starting a kitchen remodel & flooring project and have been trying to understand what a contractor will need do with the flooring. I currently have a combination of water damaged wood and tile on the entire 1st floor. I am also trying to both decide between wood grained LVP/SPC and porcelain tile and currently leaning towards the wood grained porcelain tile.

Q1: How much coverage should the new flooring have?

Guy #1: I talked to him about LVP/SPC and he said that he would only tile to the edge of the cabinets, under the stove, dishwasher and refrigerator.

Guy #2: I talked to him about tile and he said after a complete demo, he would cover 100% with tile, then put the cabinets and everything on top of the tile.

Q2: Would this answer be any different depending on the flooring type?

Q3: Besides the extra 50 sqft of tile, is there a downside or preference for doing the whole floor first?

It feels like a more complete job if the entire floor is complete, but wanted to get feedback.
