Pan fried rotisserie chicken

You take some rotisserie chicken and shred it fine (trust me it fries better smaller). Then you put butter or oil in a pan and dump the shredded chicken in. Salt it well. Let it fry on one side for a while and then flip the pieces once browned on one side. Truthfully I've never burned it probably because of the high fat/moisture content but I won't doubt the ability of others to do so.

Bonus you can refry the chicken skin to make it extra extra crispy.

It comes out crispy and crunchy. I'm sure it would go well with beer if I drank. I eat it with rice for a real struggle meal or to elevate it I put it on a fresh salad.

You can get about 5 or 6 single person portions out of a rotisserie chicken like this. But usually I get 2-3 since I eat the desirable parts (drums and thighs) first. This method is a good way to get through the drier parts of the chicken breast.
