Carrying large heavy trays

Im a newbie server (just worked my first mothers day brunch whew!) and im having a lot of trouble carrying the large heavy trays of food. Honestly this goes for any food tray whether its 3 dishes or 7, but i cannot for the life of me figure out how to do it one handed. (Oval trays)

For context, im pretty small 5’6 105 lbs and my upper body strength is lacking. No matter how hard i try, it feels physically impossible for me to go one handed with a food tray and tray jack on the other arm the way i see my other servers doing. Its way too wobbly for me to go walk to a table that way and not fuck it up.

Obviously this skill comes with experience to an extent, but is there some sort of technique any fellow small armed ladies use? Im also not quite comfortable using my shoulder as ive just never done it.. any tips with that one? Do i just need to go to the gym? Any advice or funny stories appreciated 😭
