I finally understood why people say Delhi runs on chole bhature — Sita Ram Diwan Chand, Paharganj (since 1970)

Walked in, no menu, no choices. Just one thing done perfectly for 55 years. The bhature were the size of my face, the chole had this dark, smoky depth that no restaurant in Gurgaon has ever come close to. The raw onion + green chilli + carrot achaar on the side is doing MORE work than it gets credit for.

If you haven’t been, you haven’t eaten chole bhature. You’ve only eaten its corporate cousin.
