Diary ladder - cheese question

Hi everyone! My baby is almost 10 months old and we are working through the dairy ladder. He has passed muffins and pancakes. I know the next step is cheese, but I’m confused whether or not I can just give him some shredded cheese or if it needs to be melted. Any guidance is helpful!

For those of you whose baby has a non-ige dairy allergy, when you were challenging it, did you do the ladder or you just feed a scoop of Greek yogurt? I started with muffin and it went well but then I remembered the bowel sounds podcast. Thoughts or advice would be appreciated!

How long do you recommend staying on each step? My baby has eaten muffin for 5 days now and is now eating half a muffin every morning, no symptoms. Can I move to next step?
