Beginner guidamce, life load/starting point

32yr Male, 5'9 150lbs need advice on how to start. Sorry for the wall of text but that is for context.

Just ran for the first time in 2years. Did a 5k TT in 24:00 but could probably have gone faster. First 3k was pretty conservative since it was a long time ago.

The last 15 years i have worked out in some way (mostly gym, sometimes a sport, sometimes jogging) for maybe 3 months out of the year(summer) every year, while always having a manual labour job. So i have been somewhat active and i guess that is some sort of "base", albeit not running.

For the last 6 months i have been working 2 manual labour jobs and I am now quitting one of them. So i will gain (or loose) 8 hours of driving/walking/lifting/carrying and I want to start NSM with the newfound time, running 6 days per week.

So the main question is: What should i start with? ~40min Easy+20min Sub-T? Or could i jump staight into ~60 Easy+30min Sub-T? Im guessing my body could handle jumping in to the higher end since im used to 8 hours of extra work?
