Tempura Whiting with Pineapple and Avocado Salsa

Hawaiian (for wife and daughter) and Pepperoni with Ricotta and Hot Honey (for me).

Probably could have used another minute or 2 but still good for a quick and easy Friday dinner.

First Roast of the year.

Roast pork loin, roast potatoes and sweet potatoes, steamed carrot and peas topped with gravy. Served with homemade dinner rolls that I forgot to take a photo of.

I feel things I would change if I was doing it just for me but I have a picky 3 year old and an even pickier wife.
