For the last dozen years or so, my boys get their choice of cake and decoration for their birthday. Building scale models for the last 40 years has given me some help. This year, my youngest chose a Knight of the Seven Kingdoms cake for his birthday.
I made his special request chocolate cake with layers of ganache and cookie dough in the shape of Ser Duncan the Tall’s shield. It’s been several years since they asked me to airbrush their cake. Fondant trim to best match the shield
My son wanted another round of Al pastor on the smoker for his birthday dinner. I whipped up another round of marinade on Saturday and let all the pork chill in it over night. Four hours on the WSM at about 250 and it came out perfect again. Used that woods I had on hand, hickory and mesquite along with some slower burning charcoal. As usual there were hardly any leftovers.
I also make their birthday cakes so to go along with the al pastor he got his chocolate cake with layers of ganache and cookie dough. This year he wanted a Knight of the Seven Kingdoms theme so I busted out the airbrush and painted it for him.
