Had a crazy amount of wind yesterday during the cook. So i was dealing with temp swings for 3-4 hours. Cooked between 225 and 285. The cook took about 8 hours (brisket point), and an additional 2 hours for rest.

I've cooked brisket on my pellet smoker before, so cooking it on my off-set was definitely a learning process. It turned out juicy, good bark, but i feel like it could have been a little more tender.

For the fuel i used lump charcoal, post oak, and hickory wood splits.

Cooked a brisket point yesterday on my Oklahoma joe highland. Dealt with some wind and temp swings yesterday. Ive cooked brisket on a pellet smoker before, so this was a learning curve.

The cook took about 8 hours, after that i let it rest for 2 hours in a cooler wrapped in towels. It came out juicy, i do feel like it could have been a little more tender.
